Story

The view of West Africa as a primary provider of traditional cocoa is slowly evolving due to advancements in post-harvest techniques that unlock the full taste potential of its local varieties. These beans come from ABOCFA, a relatively new cooperative made up of more than 700 farmers across 13 districts in Suhum. In 2011, it was the first cooperative in Ghana to receive both double Fairtrade and Organic certifications.

The organization is known for its innovation and provides complete transparency from the farm level. Its members have a direct influence on how the profits are allocated. Half of the profits are distributed directly to the farmers, while the rest is allocated to community initiatives aimed at enhancing rural electrification, constructing boreholes, offering financial assistance to women and youth, and addressing child labor.

This batch was the outcome of a partnership between Daarnhouwer, ABOCFA, and Progreso, a Dutch NGO that supports the cooperative in gaining market access, improving quality, and enhancing governance.

Post Harvesting Process

For this lot, only pods with a bright yellow color were harvested. Heap fermentation is carried out by each individual farmer for 7 days. The fermented beans are dried directly under the sun on a raised drying mat, about 2 meters from the ground, for 6 to 7 days.

Flavour

Classic rich, deep chocolate, brownie like in character and containing hints of woody and nutty (walnut) notes.
