Story
Colombia, formerly renowned for its Criollo chocolate varietals, progressively replaced these with contemporary hybrids to promote hardiness and yield while preserving intriguing tastes. Colombia is constantly working to elevate cacao to the same legendary status as coffee these days. The government and organised chocolate producer groups have been supporting national initiatives to map genetic variants, enhance genetic stocks, and improve post-harvest procedures.
Colombia's South Pacific region of Tumaco has been severely impacted by the country's coca plantations and the existence of paramilitary organisations. With a fair and steady income, cocoa gives the locals a way to better their quality of life. The people hope for a future devoid of conflict and other issues through cocoa.

This cacao is a local Belizean Trinitario variety hybridized with local Criolla
Post Harvesting Process
The beans are centrally fermented in tiered wooden boxes with standardized protocols to achieve consistent quality and flavour. The beans are dried in drying tunnels for an average of 7 days.
Flavour
Full and balanced body. Clear tones of panela are followed by an explosion of tropical yellow fruit, floral honey and caramel and ending with slight nut (cashew).
